Homemade Donuts

My son asked me to make donuts for breakfast, so I looked up a recipe and settled on these homemade cake donuts.

They were pretty simple to make and the kids enjoyed helping. I used a large cup for cutting out the outer shape and a prescription bottle lid for the inner circle. It was just the right size for little hands.

This recipe made plenty for us. Here are the leftovers, though they didn't last long!

Ingredients:
2 cups flour
1/2 cup sugar
1 teaspoon salt
1 tablespoon baking powder
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
2 tablespoons melted butter
1/2 cup milk
1 egg, beaten
1 quart oil for frying
optional - powdered sugar or cinnamon sugar mixture

Preparation:
For draining doughnuts, prepare a place with either newspapers or a brown paper bag. Top those with paper towels. Either flour clean kitchen counter or bread board for kneading doughnuts. Prepare a shallow bowl or plate with an inch of flour.

Heat oil in deep fryer to 375 degrees F.

Sift flour, sugar, salt, baking powder, cinnamon and nutmeg. Mix in butter until crumbly. Stir in milk and egg. With floured hands, lightly knead the smooth dough. Turn onto area prepared with flour. Pat dough into 1/4 inch thickness. Dip either doughnut cutter or two biscuit cutters (one 1-inch and one 3 or 4-inch) in flour. Use to cut-out doughnuts. Carefully drop doughnuts into hot oil, only a few at a time. Fry, turning once, for about 3 minutes or until golden brown. Drain on prepared paper towels. Sprinkle with powdered sugar or cinnamon-sugar mixture.

Those look good, but honestly I'm not really a cake donut kind of girl. Give me a good ol' Krispy Kreme (or its homemade equivalent) over a cake donut any day. :-)

Question: what do you do with the oil after you're done frying? Do you reuse it or dispose of it? If you reuse it, how do you store it? If you dispose of it, what's the best way to do that?

(I should know all these things, but I am woefully ignorant.)

I keep the oil in the deep fryer and carefully put the deep fryer away in the pantry with the lid on.

After several uses I throw it out in an empty milk jug with the lid screwed on tightly.

If I use it for frying fish, I'll only use it again for fish because it has a fishy smell.

I thought we told you about our "homemade" doughnuts....get the cheapest can of biscuits you can buy and lay them out. I use a funnel to punch a hole in the middle of each biscuit. We stick all the doughnut "holes" together and use it for testing the grease. It only takes about 15 seconds per side if that long. Drain on a paper towel.
Top with powdered sugar or I make a confectioner's sugar glaze & dunk them one at a time into a small pan. I use a wooden or plastic spoon to stick in the whole to be able to dip and flip them over in the glaze. Lay on wax paper. Enjoy! :D

Ginny, I'm going to try that! It sounds easy and the glaze sounds sooooo good! A funnel would have been the perfect size for the hole. Our hole was a little loopy.
