Funfetti Cupcakes

This is my first time to participate in Cupcake Tuesday, hosted by my new friend, Liz from Hoosier Homemade.

I had grand plans to make Funfetti Cupcakes from this Homemade Funfetti Cake recipe my daughter perfected.

Trouble is, we were out of sprinkles and we had homeschool co-op, piano, and gymnastics today, which means I had to run to the store to pick up the sprinkles while dropping the kids hither and yon.

I came home with these.



Which were exactly the wrong kind of sprinkles to buy because they turned the batter a sad grayish pink color.




Not really the bright funfetti look we had in the original version.





As it turns out the recipe my daughter perfected calls for the oblong shaped sprinkles. Don't ask me why it makes a difference. Just believe me. It makes a difference.



See? Grayish pink. Sad.


One success I had, though, was testing this idea of using parchment paper as muffin cup liners. Even though I had enough liners, I wanted to see how the parchment paper would work out.

I cut 5x5 inch squares and made sure they were stuffed down snugly in the cups and it worked out great!



Too bad my sprinkles weren't as fun(fetti) as I was hoping.

All was not lost, though. The Smockity Bunch got wind of the cupcakes and we had ourselves an instant celebration.

You just can't help celebrating a little when you're eating a cupcake, no matter how imperfect. It's a cake in a cup, for Pete's sake!

I bet they still taste good despite their grayness. I think I've made that same mistake with the sprinkles in a cake before. It's an easy mistake to make when your mind is so busy with other things!

Ooh the ones with oblong sprinkles look so fun! - I'm going to have a go at making some this weekend... and I'm sure the other batch tasted just as yummy!! :]

I like to add multi-colored sprinkles to the cupcake batter but have not done that in ages. I best get busy!
