When I attended the blogger meet up last week, I wanted to bring a snack to share, so I went with a good ol' family favorite, "Cracker Jack Snack".
This is a simple and scrumptious treat I found in one of my favorite books, The Complete Tightwad Gazette.
I doubled this recipe and it made two huge bowls that were quickly devoured.
3/4 cups brown sugar
1/4 cup butter
3 Tbsp. corn syrup
1/4 tsp. salt
1/4 tsp. baking soda
1/4 tsp. vanilla
8 cups popped popcorn
Combine first four ingredients over low heat until butter is melted. Cook without stirring three minutes. Add baking soda and vanilla. Pour onto popcorn and mix until coated. Spread onto greased cookie sheet and bake 15 minutes at 300. Break into pieces. Enjoy!
Make sure to pick out any unpopped kernels first. Trust me on this one. It's never pretty when food makes people cry.
I think this would be extra yummy with salted peanuts added to the popcorn before the caramel mixture is poured on, though I've never tried it that way.

I don't know if you can get them, but we make this same recipe with Puff Corn. They usually come in cheese, but Mikesell's has a plain butter version of 'cheesy poofs'. In this recipe, they melt in your mouth and there are no hulls to worry about. SOOO YUMMYY!!!

second time, forgot vanilla, was STILL good... devoured...
third time... no vanilla, used almond extract - HOLY COW! dee-lish!
I tried this recipie with the almond extract that Jenn suggested... that was great!! Definatley going to make that again!! =) I suggest using mushroom popcorn because then it wont break into so many small pieces like microwave popcorn does! I found a site that sells the kernals very reasonably priced (http://www.justpoppin.com) and its really good - I love to make my own popcorn; it makes for good babysitting entertainment too!! LOL!!
