Funfetti Cake From Scratch

Have y'all heard of Funfetti cake? It's a special kind of cake mix that has little something-or-others in it to make the inside of the cake look like confetti. Go see for yourself.

The first time we heard of it was when our good friends came over and brought one that they had made and decorated. My daddy liked it so much that he said he wanted another one just like it, but we didn't have any Funfetti cake mix, so we mixed up a plain old white cake mix (which was store bought, but sometimes we make our own), and after the batter was all mixed up we added in, and y'all better listen, 'cause this here's the secret, we added in two spoonfuls of the oblong rainbow sprinkles.

And it worked perfectly, too! (Make sure you use the oblong sprinkles. The little balls don't work nearly as well.)





See? It looks just like a high-falutin' store bought Funfetti cake.

Here's what it looked like after we decorated it:



If you want it even more from scratch, here is a white cake mix recipe. After you have mixed everything into the batter, add 2 spoonfuls of rainbow sprinkles.

White cake mix recipe:

2 1/3 cups all-purpose flour
1 tablespoon baking powder
3/4 teaspoon salt
1 1/2 cups white sugar
1/2 cup shortening
3 egg whites
1 cup milk
1 teaspoon vanilla extract

Sift together flour, baking powder, salt, and sugar. Cut in shortening until fine crumbs are formed. Add eggs, milk, and vanilla. Beat at low speed for 1 minute, then high for 2 minutes, scraping the bowl frequently.

Egg whites may be beaten separately before adding to mix for a lighter cake.

lol! i am so laughin' at your "secret" amount for the sprinkles. we have made our own homemade version and made the mistake of adding in oh, i don't know a bottle of confetti!!!! guess we weren't in on the "secret" LOL! yours was a whole heckuva lot prettier than ours. oh, and i bet it was edible! that's always a plus when baking a cake, right? right!

That is too funny! I had a craving for cake last week (pregnant), and funfetti cake is my favorite with the matching icing. My daughter and I whipped it up and I noticed the "secret" ingredient and thought to myself how simple that can be to do on my own. Now we'll just use the store brand mix and confetti sprinkles I already have on hand!
