Recycled Chicken 'N Dumplin's

Our family loves to have chicken and dumplin's. I boil a whole chicken, de-bone it, and then put everything back into the pot I used for boiling. This makes a huge mess o' yumminess!

The next night, after we've eaten up our favorite part, the dumplin's, we have chicken noodle soup. After that, my family is pretty of tired chickeny-soupy type meals, even though there is still a fair amount of chicken and broth left.

Then, just this week I came up with a way to recycle the leftovers! I poured what was left into a 9 x 13 pan and put in an equal amount of rice. I covered that with heavy duty aluminum foil and popped it into a 425 oven for 1 hour.

WAH-LAH! Chicken and rice casserole! We all enjoyed it, and the prep time was about 2 and a half minutes.

By the way, that whole chicken cost $4.29. That's a pretty cheap, er, frugal way to feed 9 people for 3 meals! For lots more frugal tips, go to Biblical Womanhood.

Wow! it all sounds delicious. I always have trouble when I boil a chicken --there are always texture issues. Is this an overcooking problem or is there a special trick to creating the yumminess?

Rete, You may be overcooking. I check my chicken every so often and pierce it with a big fork when I think it's done. It the juice is clear, I turn the burner off and move the chicken to cool on a cutting board.

Okay, that does it. I have to take a chicken from the freezer for stock this week. I have been craving chicken & dumplings...and you have inspired me!

Very smart idea. My family would enjoy this too, but the chicken just won't go that far for us, I think. We're protein ppl here! Still, we haven't had chicken 'n' dumplin's in a long time. :-)

Mary and Heather, I posted my recipe. On the rice, I just used what I had, which was Minute Rice. I used about half brown and half white.
