Leftover Roast

Whenever we have roast, about once a week, and always with carrots and potatoes, there are usually leftovers, but not enough for everyone to have the same meal again. So, the next night we always have stew and cornbread.


I cut up all the leftovers into bite sized pieces and throw them into a stew pot. Then, I add the drippings from the roast, a couple of 8 oz. cans of tomato sauce, 1 can of whole kernel corn and 1 packet of brown gravy mix. I simmer this while I make the cornbread, and wah-lah, after only 10 minutes prep time and about 30 minutes total, I have a delicious hearty meal that my family loves.


Just for fun, I always hide a dry bean in the cornbread before I put it in the oven. Whoever gets the bean gets to be king or queen for the rest of the evening. Most of the king or queen's time is spent deciding who will be lady in waiting, spy, advisor, etc, and then telling them what to do. Amazingly,this is grand fun, and if I happen to forget the bean, there is much disappointment. If there are any bad attitudes about not getting the bean, then there will be no bean the next time.

The stew sounds great - I do something similar, but combined with the chance to be king or queen for the rest of the day? Priceless!

Mmm, that sounds great! One of my favorite uses for leftovers is pot pie.
