Chopping Onions

Are you like me and you hate chopping onions? I can't help it. They make me bawl like a baby!

Whenever I need chopped onions, like I did for this hushpuppy recipe, I throw 2 or 3 onions into the food processor and let it do its thing. Then, I use what I need and put the excess in those little snack size ziploc bags. I smash the bags flat for easier thawing, label them, and put them in the freezer to use the next time I need chopped onions.

You people have probably been doing that all along, but I just figured it out, and it has saved me lots of tears and the time it takes to drag out the food processor, clean it, and put it away.

I have one of those mini sized choppers that is just the right size for chopping one onion. I'm with you on doing whatever I can to avoid the tears. Usually I use the whole onion in my recipe but if not I just put the leftovers in a small plastic container in the fridge and use within a day or two in the next recipe on my menu. I think if I tried freezing them I would lose the little baggies in the black hole of my freezer.

That is a great idea. I never thought of freezing leftover onion, and I always seem to be throwing out half an onion that has been in the fridge for several days.

Great idea! I don't have a food processor (yet) but I have started freezing my leftover onions and it works great. It saves tears and makes recipes easier when the onions are already chopped.

I don't have a food processor either BUT I keep my onions in the fridge because I think it saves on the tears. Well, it does for me.

And of course, if I'm cutting onions then I cut a lot so it's all done with for the week.

My frozen onions always come out all limp. Poor turgor pressure. Of course, I don't cry while chopping onions unless it's half rotten or really really really strong.

My other tip: never, ever touch your eyes while chopping onions (or hot peppers!).

hey, great tip! I love your little time line for the baby! you have to let us all know if it is a boy or girl as soon as you find out (unless you are waiting) I am so excited for you! I was wondering though, how closely spaced are your kids? AJ is almost 9 months, and we are debating about when to add the second.. how long did you guys wait and what do you think is a good period of time? I am going to start freezing onions! Great tip. Even with the food processor, I still get teary w/ onions so I heard a tip on Take Home Chef about chewing gum while cutting onions and it really does work! You do have to chew actively the whole time.

What a great idea! I always want to use onions, but really cannot stand to chop them. Usually I try and use dried minced onion, but of course that doesn't always work in certian recipes.

or you can skip the cuttin totally and just buy them chopped and frozen already.
